The Cerrado region, the newest of three major Brazilian growing regions, has been building in reputation and production over the last few decades. The region also has relatively mild weather patterns providing a more predictable climate for processing coffee.
The Mountain Water Process is applied to beans in order to decaffeinate them. This is performed by Descamex, in Mexico, After very detailed physical and chemical analysis, the coffee is being steamed and prepared for the caffeine extraction under carefully controlled conditions. The next step is to apply triple drying system and to polish the coffee beans at the end.
